All About Maple Syrup

Our organic maple syrup has a rich, earthly, and complex sweet taste. It is made from the Sugar Maple (Acer saccharum) and Red Maple (Acer rubrum) trees of Western, Maine. The sap from Sugar Maple trees is harvested in the spring, when the night-time temperatures drop below freezing, and the day-time temperatures warm above freezing. It is this short season where the "sugar makers" or the farmers who make maple syrup complete the labor intensive work to collect sap from the trees, and slowly boil it down over a wood fire while it thickens into a delicious amber colored maple syrup. Making maple syrup is called "sugaring" and has a rich tradition in New England dating back to Native Americans. Maple syrup is a natural and delicious food that people love to top their favorite breakfast and desserts with. It can be used to replace any type of sweetener in cooking or baking, and can even be used to sweeten your afternoon tea. Because of the short maple sugaring season and because it is so labor intensive to produce maple syrup, it is a highly valued product and has the nickname "liquid gold." From the 2017 season we can offer three types of Grade A maple syrup: Amber Rich and Dark Robust and Very Dark. The grades are determined by the color of the maple syrup, or more accurately said, the amount of light that passes through the maple syrup. The Amber maple syrup is lighter (lets more light through) than the Dark, which is lighter than the Very Dark. Makes sense right? Another component of the grades is the flavor. The darker maple syrup tends to have more of a rich maple flavor, while the lighter you go on the spectrum, the more delicate the maple flavor. The first word in the grade describes the light transmittance (think color) and the second word describes the taste. So for example, Grade A, Amber Rich Maple Syrup should look like an amber color, letting through 50-75% of the light that passes through it and have a rich maple flavor.

We offer our organic maple syrup in both glass containers and more traditional plastic jugs. The custom glass containers range in size from 1.4 ounces to full gallon jugs. These glass containers showcase the beautiful shades of amber of maple syrup. Our more traditional plastic jugs are BPA-free, and make it easy to ship and travel with our delicious organic maple.
All of our maple syrup is hot packed at very high temperatures and comes sealed. It does not need to be refrigerated until that seal is opened. Once it is opened, enjoy, use and share generously!
